MESSAGE FROM THE OWNER

Hello. I'm Steve Stealey, with Steve's Services- BBQ Division in Carthage, Missouri.

I am lucky enough to have started barbecuing at the age of seven. I began by helping with "cowboy cooking" and grew to know and compete amongst some of the best in the BBQ business. I am a Master CBJ (Certified Barbeque Judge) with the KCBS (Kansas City Barbeque Society) and have judged and competed in most major associations across the United States.

Somewhere near the mid to late eighties was my first experience cooking in a barrel. To quiet the local braggart, we ended up betting on best finish in major contest wins. For me, silence from them, no boasting for six months, for him?? Well, I wasn't planning on losing anyway. He pulled out all the tricks, brand new rotating pit, two so called chefs and lot of bravado. As luck would have it I lost my cooker on the way to the Royal. Still do not know where it went to this day. Anyway, I found a rusty barrel, spent several hours cleaning and preparing to cook pulled pork, our agreed category. I used my size 12 cowboy boot to make a air inlet, hammered a pop can flat for a slide control, attached a rack to a threaded rod for temp. control,and the cooking started. I have never worked so hard tending fire. Long story short, my entry was around 40th and his was in the 200's. I never heard from them again.

My real job then was racing sprint cars all over the country. Thanks to those times I learned about airflow and plumbing. That is the source of my design. High airflow slowed down with a smoker plate and a water pan. Cold air drops, hot moist air rises, very simple. Great Food Fast.
